This menu includes some of the tastiest and most innovative dishes created in our kitchen at La Clusaz, based on seasonally available produce.  

First, choose between "Ravioli di boudin" that is served with cauliflower sauce" or Fresh pasta with poched egg and toma cheese". Both combine seasonal flavours with creativity and innovation. Then be tempted by our "Piedino di maiale farcito..." pig's trotter stuffed with white meats, sweetbread and veal's check served with ovencooked ognion.

A starter choice: 

Pig cheek, sliveers of steamed cod, sauce with black cabbage
Sautéed calamari, hummus
Poached egg, shallot sauce, salted sablé


 A first dish choice: 

Tortelli with "boudin", potato cream, chocolat bisquit
Spaghetti Gragnano with "cheese and pepper"
(we use a goat cheese made in Aosta Valley, a little bit smoked ands seasoned, poduced from Bergerie Henriet)
Risotto with pumpkin, Bleu d'Aosta sauce, licorice powder (Minimum 2 people)


 A main dish choice: 

Pork belly glazed with honey vanilla, with a tart of pumpkin and cabbage
Turbot fillet, sautéed potato quarantine, shitake mushrooms, artichokes
Veal tongue, vegetables sweet and sour cream
